How To Make Traditional Bobotie Keto

🛒 What You’ll Need
• 2 tbsp coconut oil
• 1 large onion, finely chopped
• 1 tbsp curry powder
• 1 tsp turmeric
• 1 tsp cumin
• 1kg beef mince
• 1 tsp salt
• ⅓ cup CarbSmart Chutney
• 5 eggs (3 for topping, 2 for mince)
• 1 cup buttermilk
• Salt and pepper, to taste
• 4 bay leaves

👩‍🍳 Method

Step 1: Prep the oven.
Preheat your oven to 180°C.

Step 2: Cook the base.
Heat the coconut oil in a large pan over medium heat. Add the onion and cook until soft and lightly golden.

Step 3: Add the spices.
Stir in the curry powder, turmeric and cumin. Cook for a few minutes until fragrant.

Step 4: Brown the mince.
Add the beef mince and salt. Cook until the mince is browned and cooked through, breaking it up as it cooks.

Step 5: Add the chutney.
Stir through the chutney and remove the pan from the heat.

Step 6: Add the eggs.
Mix in 2 eggs until fully combined. Transfer the mixture to a greased baking dish and smooth the top.

Step 7: Make the topping.
In a bowl, whisk together the remaining 3 eggs and buttermilk. Season with salt and pepper.

Step 8: Assemble.
Pour the egg mixture over the mince and place the bay leaves on top.

Step 9: Bake.
Bake for 45 minutes, or until the topping is set and lightly golden.

Step 10: Serve.
Let it rest for a few minutes before serving. Serve with a green salad or cauliflower rice, and extra chutney if you like.
