How To Make Your Favourite Trinchado Keto

This is a proper comfort meal. Rich, saucy, and full of flavour.

Tender beef cubes simmered in red wine, garlic, and chilli, finished with a splash of cream for that classic trinchado feel. It is low carb, filling, and perfect for cooler nights. Serve it on its own or with cauliflower mash to soak up every bit of that sauce.

Once you make it, it will earn a spot in your regular rotation.

🛒 What You’ll Need
• 1 kg rump steak (cut into large cubes)
• 2 tbsp CarbSmart Beef & Chilli seasoning
• 2 tbsp beef tallow
• 150g onion (finely chopped)
• 4 tsp garlic paste (or 5–6 cloves, minced)
• 300ml beef stock
• 200ml red wine
• 4 tbsp Martinnaise Worcestershire sauce
• 2 tbsp tomato paste
• 3 tbsp Colleen’s Homemade chilli sauce (to taste)
• 3 bay leaves
• Salt, to taste
• Black pepper, to taste
• 100 ml cream

👩‍🍳 Method

Step 1: Season the beef
Coat the beef cubes well with the beef and chilli seasoning.

Step 2: Brown the beef
Heat tallow in a large pan over medium-high heat. Brown the beef in batches until golden on all sides. Do not overcrowd the pan. Set aside.

Step 3: Cook the onions
In the same pan, add the onions. Cook until soft. Add a little more tallow if needed.

Step 4: Add garlic
Stir in the garlic and cook for about 30–60 seconds.

Step 5: Build the sauce
Pour in the beef stock and red wine to deglaze the pan. Scrape up all the flavour from the bottom.

Step 6: Add flavour
Stir in Worcestershire sauce, tomato paste, chilli sauce, bay leaves, salt, and pepper.

Step 7: Simmer
Return the beef to the pot. Cover and simmer for 1 hour.

Step 8: Reduce
Remove the lid and simmer for another 30 minutes to thicken the sauce.

Step 9: Finish
Stir in the cream and simmer until the sauce is rich and glossy.

Step 10: Serve
Serve hot. Best enjoyed with something to soak up the sauce.
