Best Quick & Easy Creamy Sun-Dried Tomato Chicken

If you’ve ever stood in front of the fridge at 5pm wondering what on earth to do with chicken breasts again, this recipe is your answer.

This sun-dried tomato chicken is rich, creamy and packed with flavour, but still simple enough to throw together on a busy weeknight. It tastes like something you would order at a good restaurant, yet it uses basic ingredients you probably already have at home.

It is comforting without being heavy, satisfying without leaving you feeling sluggish, and honestly one of those meals that makes everyone think you really have your life together. We love a dinner that does that.

🛒 What You’ll Need

• 650g chicken breast, skinless and boneless, chopped
• 1 tbsp olive oil, or oil from the sun-dried tomato jar
• 3 garlic cloves, crushed
• 170g sun-dried tomatoes in oil, drained and sliced
• 1 tsp dried oregano
• 2 tsp paprika
• 1 packet TrulyGoodFood Nicer Than Rice, drained and rinsed well
• 650ml hot chicken stock
• 150ml fresh cream
• 50g parmesan, grated
• 120g fresh spinach, washed and chopped
• Freshly ground black pepper


👩‍🍳 Method

Step 1: Brown the chicken.
Heat the oil in a large deep frying pan over medium heat. Add the chopped chicken and cook for about 5 minutes, stirring occasionally, until lightly golden on the outside.

Step 2: Add the flavour.
Turn the heat down slightly and add the garlic, sun-dried tomatoes, oregano and paprika. Cook for 3 to 5 minutes, stirring regularly, until the garlic softens and everything smells incredible.

Step 3: Add the base.
Stir in the drained and rinsed TrulyGoodFood Nicer Than Rice. Pour in the hot chicken stock and season with black pepper. Stir well, cover with a lid and allow it to simmer for about 8 to 10 minutes, stirring occasionally.

Step 4: Make it creamy.
Reduce the heat to low. Add the spinach and cream and stir through until the spinach wilts and the sauce thickens slightly. Make sure the chicken is cooked through.

Step 5: Finish and serve.
Remove from the heat and stir in the grated parmesan. Let the dish stand for a few minutes before serving so the sauce can thicken slightly.

Serve warm.

• Rinse the Nicer Than Rice well under cold water before cooking to remove excess liquid.
• Using the oil from the sun-dried tomatoes adds extra depth of flavour.
