Serves 4
What you’ll need:
4 boneless, skinless chicken breasts sliced
1 tbsp Usisi Gogo’s Curry Seasoning
1 tsp Usisi Garlic Flakes
Salt & Pepper to taste
1 small pack Zucchini
1 Jalapeno seeded and diced (Optional)
1 can Coconut Milk
Handful of Basil finely sliced
Method:
- Heat coconut oil in a pot over a medium high heat.
- Season your chicken with salt & pepper and brown in the pot.
- Once browned add the curry spice, garlic flakes, zucchini and jalapeno and sauté for a few minutes.
- Pour over your coconut milk and reduce the heat. Simmer for about 15 minutes before adding your basil.
- Cook for about 5 more minutes before serving with some cauli rice or braised cabbage.
