What You’ll Need:
250g Cauliflower steamed
250g green beans blanched and trimmed
1 small red onion sliced
Dressing:
1/2 cup olive oil
2 tbsp wholegrain mustard
1/4 cup balsamic vinegar
1 tsp minced garlic
2 tbsp fresh diced chives
Salt & pepper to taste
- Combine cauliflower, green beans and onion in a large dish and mix well (They should be completely cooled).
- Mix your dressing and pour over your salad before tossing well.
- Serve as is or refrigerate until needed.
