Servings: 6

Ingredients:

  • 900g boneless pork loin, cut into 2.5 cm pieces
  • Salt and pepper, to taste
  • 2 tbsp butter (for pork)
  • 1 tbsp coconut oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp sweet paprika
  • 375ml chicken broth
  • 1 tbsp chopped fresh dill
  • CarbSmart Chicken Instant Thickener, 1 packet
  • 250ml sour cream

For the riced cabbage:

  • 1 large head of cabbage, riced (finely chopped or grated)
  • 2 tbsp butter (for cabbage)
  • Salt and pepper, to taste

Instructions:

  1. Cook the Pork
Season the pork with salt and pepper. Heat butter and coconut oil in a large pot over medium-high heat. Add the pork in batches, browning it on all sides. Once browned, remove the pork and set it aside.
  2. Sauté the Onion and Garlic
In the same pot, add the finely chopped onion and cook for about 3 minutes until soft. Add minced garlic and sweet paprika, cooking for 30 seconds until fragrant.
  3. Simmer the Pork
Return the browned pork to the pot. Pour in the chicken broth, add chopped dill, and stir in the CarbSmart Chicken Instant Thickener. Bring to a simmer, cover, and let it cook for about 45 minutes, or until the pork is tender.
  4. Make it Creamy
Once the pork is cooked through and tender, stir in the sour cream until everything is well combined. Season to taste with additional salt and pepper..
  5. Prepare the Riced Cabbage
While the pork simmers, melt 30g of butter in a large pan over medium heat. Add the riced cabbage, season with salt and pepper, and sauté for 5-7 minutes until the cabbage is tender and slightly golden.
  6. Serve
Spoon the pork stew over the buttery riced cabbage and garnish with a sprinkle of fresh dill if you like.

This creamy pork dish served over riced cabbage is keto heaven! Quick and easy, made in one pot, and perfect for a satisfying meal without the hassle of an oven. Enjoy!
