Ingredients:
- 900g boneless pork loin, cut into 2.5 cm pieces
- Salt and pepper, to taste
- 2 tbsp butter (for pork)
- 1 tbsp coconut oil
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp sweet paprika
- 375ml chicken broth
- 1 tbsp chopped fresh dill
- CarbSmart Chicken Instant Thickener, 1 packet
- 250ml sour cream
For the riced cabbage:
- 1 large head of cabbage, riced (finely chopped or grated)
- 2 tbsp butter (for cabbage)
- Salt and pepper, to taste
Instructions:
- Cook the Pork
Season the pork with salt and pepper. Heat butter and coconut oil in a large pot over medium-high heat. Add the pork in batches, browning it on all sides. Once browned, remove the pork and set it aside. - Sauté the Onion and Garlic
In the same pot, add the finely chopped onion and cook for about 3 minutes until soft. Add minced garlic and sweet paprika, cooking for 30 seconds until fragrant. - Simmer the Pork
Return the browned pork to the pot. Pour in the chicken broth, add chopped dill, and stir in the CarbSmart Chicken Instant Thickener. Bring to a simmer, cover, and let it cook for about 45 minutes, or until the pork is tender. - Make it Creamy
Once the pork is cooked through and tender, stir in the sour cream until everything is well combined. Season to taste with additional salt and pepper.. - Prepare the Riced Cabbage
While the pork simmers, melt 30g of butter in a large pan over medium heat. Add the riced cabbage, season with salt and pepper, and sauté for 5-7 minutes until the cabbage is tender and slightly golden. - Serve
