Ultimate Low Carb Granola Recipe for a Guilt-Free Breakfast

Ingredients:

  • 1 cup Walnuts, roughly chopped
  • 1 cup Macadamia nuts, coarsely chopped
  • 1 cup Brazil nuts, roughly chopped
  • 1/3 cup Hemp seeds
  • 1/3 cup Flaked coconut
  • 6 tbsp Erythritol (or your preferred keto friendly sweetener)
  • 1/2 cup Chia seeds
  • 1 large Egg white, lightly beaten
  • 1/4 cup Avocado oil (or melted coconut oil)
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground ginger
  • 1/4 tsp Ground cardamom
  • Pinch of sea salt

Instructions:

  1. Preheat your oven to 150°C. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the chopped walnuts, macadamia nuts, brazil nuts, hemp seeds, and flaked coconut.
  3. Sprinkle erythritol over the nut mixture and toss until evenly coated.
  4. In a separate small bowl, whisk together the beaten egg white, avocado oil, ground cinnamon, ground ginger, ground cardamom, and a pinch of sea salt.
  5. Pour the wet mixture over the nut mixture and stir until everything is well combined and coated.
  6. Spread the mixture evenly onto the prepared baking sheet.
  7. Bake for 25-30 minutes, stirring halfway through, until the granola is golden and crispy.
  8. Remove from the oven and let cool completely on the baking sheet.
  9. Once cooled, break the granola into clusters and transfer to an airtight container for storage.
