How to Make a Ham & Zucchini Crustless Quiche

This one looks fancy enough for brunch guests, but honestly? It’s a fridge raid recipe that’s super budget friendly and ridiculously easy to pull together.

This ham & zucchini crustless quiche is protein packed, low carb, and perfect for breakfast, lunch, or even a light dinner. No pastry, no fuss, and no standing in the kitchen for hours. Just simple ingredients layered into a beautiful rose pattern, baked until golden and set.

🛒 What You’ll Need

• 200g sliced ham
• 10 eggs
• 300g zucchini
• ½ cup grated white cheddar
• Salt, to taste
• Black pepper, to taste
• Garlic powder
• Onion powder
• Italian herb seasoning

(Use the spices you love – this is very much a “make it your own” situation.)


👩‍🍳 Method

Step 1: Prep the veggies.
Preheat your oven to 180°C.
Top and tail the zucchini and slice lengthwise into thin ribbons.

Step 2: Prep the ham.
Cut the ham slices into sections roughly the same width as the zucchini ribbons.

Step 3: Build the quiche.
Lightly grease a pie dish.
Starting from the outside, layer the zucchini and ham slices upright, slightly overlapping, alternating zucchini and ham as you work your way around the dish.
Keep going until you’ve created a rose pattern all the way into the centre.

Step 4: Whisk the eggs.
In a bowl, whisk together the eggs, salt, pepper, garlic powder, onion powder, and Italian herbs.

Step 5: Pour and top.
Carefully pour the egg mixture evenly over the zucchini and ham.
Sprinkle the grated white cheddar over the top.

Step 6: Bake.
Bake for about 30 minutes, or until set and beautifully golden on top.
Let it rest for a few minutes before slicing, worth the wait.
