SPINACH AND BACON QUICHE

Serves 6

What You’ll Need:

1 tbsp Extra Virgin Olive Oil or Coconut Oil

500g thick cut bacon

2 cups frozen chopped spinach

2 tsp minced garlic and herb

1 round feta cheese

8 Eggs

250ml sour cream

Salt & pepper

Method:

  1. Pre-heat oven to 180C.
  2. Heat a deep oven proof pan over a medium high heat. Add oil to the pan.
  3. Slice your bacon and cook until nicely brown. Remove and set aside.
  4. Reduce the heat and add your spinach. Cook until the water has cooked out of the spinach.
  5. Add the garlic and herb and simmer for another minute before turning off the heat.
  6. Return the bacon to the pan and give a good mix.
  7. Crumble over your feta.
  8. In a large bowl whisk together your eggs and sour cream and season well with salt and pepper.
  9. Pour your egg mixture over your bacon and spinach and bake at 180C for 40 minutes until cooked through.
  10. Slice and serve. This recipe does freeze well for meal prep.
