Serves 6
What You’ll Need:
1 tbsp Extra Virgin Olive Oil or Coconut Oil
500g thick cut bacon
2 cups frozen chopped spinach
2 tsp minced garlic and herb
1 round feta cheese
8 Eggs
250ml sour cream
Salt & pepper
Method:
- Pre-heat oven to 180C.
- Heat a deep oven proof pan over a medium high heat. Add oil to the pan.
- Slice your bacon and cook until nicely brown. Remove and set aside.
- Reduce the heat and add your spinach. Cook until the water has cooked out of the spinach.
- Add the garlic and herb and simmer for another minute before turning off the heat.
- Return the bacon to the pan and give a good mix.
- Crumble over your feta.
- In a large bowl whisk together your eggs and sour cream and season well with salt and pepper.
- Pour your egg mixture over your bacon and spinach and bake at 180C for 40 minutes until cooked through.
- Slice and serve. This recipe does freeze well for meal prep.
