🛒 What You’ll Need

For the Base:
• 100g pistachios, finely chopped
• 40g Keto Co Allulose (or preferred keto sweetener)
• 50g unsalted butter, melted

For the Cheesecake Filling:
• 400g cream cheese, softened
• 200ml fresh cream
• 50g Keto Co Allulose
• 1 tsp vanilla extract
• 40g pistachios, roughly diced (reserve a few for topping)

For the Raspberry Swirl:
• 100g fresh or frozen raspberries (Some additional raspberries for topping if desired)
• 1 tbsp Keto Co Allulose


👩‍🍳 Method

Step 1: Preheat your oven to 160°C (fan). Line a 20cm springform pan with baking paper.

Step 2: Make the base. Combine finely chopped pistachios, allulose, and melted butter in a bowl. Press the mixture evenly into the base of the pan. Bake for 10 minutes, then let it cool completely.

Step 3: Make the raspberry swirl. Blend the raspberries and allulose until smooth. Strain to remove seeds if desired. Set aside.

Step 4: Make the filling. In a large bowl, beat cream cheese, fresh cream, allulose, and vanilla until smooth and creamy. Fold in the chopped pistachios.

Step 5: Pour half the cheesecake filling over the cooled base. Dollop half the raspberry puree on top and use a skewer to gently swirl it in. Repeat with the remaining filling and raspberry puree.

Step 6: Smooth the top with a spatula and sprinkle the reserved chopped pistachios and additional raspberries on top.

Step 7: Chill in the fridge for at least 4 hours, or overnight for a firmer cheesecake.
