Perfect for dunking in your tea or impressing the family or friends. They’ll have you feeling like a keto kitchen hero. Plus, they’re super easy to whip up, because who’s got time for faffing about when there’s summer sun to soak up? Let’s get baking!

Ingredients:

  • 125g almond flour
  • 100g allulose or preferred keto sweetener
  • 60g butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 tsp bicarbonate of soda

Instructions:

  1. Preheat your oven: Set it to 180°C and line a baking tray with parchment paper.
  2. Mix the dry ingredients: In a bowl, combine almond flour, sweetener, cinnamon, ginger, nutmeg, salt, and bicarbonate of soda.
  3. Add the wet ingredients: Blend in the softened butter, egg, and vanilla extract until the mixture forms a dough.
  4. Chill the dough: Place the dough in the freezer for 10 minutes to firm up—it helps the biscuits hold their shape and get that perfect crunch.
  5. Shape and bake: Roll the dough into small balls, place them on the prepared tray, and flatten slightly with a fork.
  6. Bake: Cook for 8-10 minutes, or until the edges are golden brown.
  7. Cool completely: Allow the biscuits to cool on the tray before transferring them to a wire rack.
