Serves 6
What You’ll Need:
Coconut Oil for cooking
1 pack diced bacon
4 chicken breasts cut into cubes
2 tsp Usisi Chicken Seasoning
2 leeks sliced
1 cup chicken broth
125ml cream
1/2 tsp Xanthan Gum
1 Head Cauliflower chopped into florets
1 tbsp Butter
60g cream cheese
Salt & Pepper to taste
1/2 cup grated cheddar cheese
Method:
- Pre-heat your oven to 180C.
- Heat a deep pan on a medium heat with some coconut oil. Add your bacon.
- When your bacon has cooked but not yet crispy add your chicken.
- Once the chicken has started browning add in the leeks and cook a few more minutes.
- Add your cream and chicken stock and bring to a simmer.
- Reduced the heat and sprinkle over the Xanthan gum. Stir until your sauce thickens and remove from the heat.
- While your filling is cooking steam your broccoli florets until soft.
- Add to a food processor with your butter and cream cheese. Season with Salt & Pepper. Blend until smooth.
- Pour your filling into a large baking dish and spread out.
- Top with your cauliflower mash and then sprinkle the cheddar cheese on top.
- Bake for 30 minutes until the top is golden and bubbly. Enjoy!
