Keto Chicken, Bacon & Leek Pie

Serves 6

What You’ll Need:

Coconut Oil for cooking

1 pack diced bacon

4 chicken breasts cut into cubes

2 tsp Usisi Chicken Seasoning

2 leeks sliced

1 cup chicken broth

125ml cream

1/2 tsp Xanthan Gum

1 Head Cauliflower chopped into florets

1 tbsp Butter

60g cream cheese

Salt & Pepper to taste

1/2 cup grated cheddar cheese

Method:

  1. Pre-heat your oven to 180C.
  2. Heat a deep pan on a medium heat with some coconut oil. Add your bacon.
  3. When your bacon has cooked but not yet crispy add your chicken.
  4. Once the chicken has started browning add in the leeks and cook a few more minutes.
  5. Add your cream and chicken stock and bring to a simmer.
  6. Reduced the heat and sprinkle over the Xanthan gum. Stir until your sauce thickens and remove from the heat.
  7. While your filling is cooking steam your broccoli florets until soft.
  8. Add to a food processor with your butter and cream cheese. Season with Salt & Pepper. Blend until smooth.
  9. Pour your filling into a large baking dish and spread out.
  10. Top with your cauliflower mash and then sprinkle the cheddar cheese on top.
  11. Bake for 30 minutes until the top is golden and bubbly. Enjoy!
