  • 400g cauliflower florets
  • 60g almond flour
  • 1 large egg
  • 30g grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp butter or olive oil, for pan-frying

Step 1: Steam or boil the cauliflower until tender. Drain well and mash until smooth. Make sure there is no excess water.

Step 2: In a large bowl, combine the mashed cauliflower, almond flour, egg, Parmesan, salt, and pepper. Mix until a soft dough forms.

Step 3: On a lightly floured surface, roll the dough into long ropes about 2 cm thick. Cut into small bite sized pieces.

Step 4: Bring a pot of salted water to a gentle boil. Drop the gnocchi in batches and cook until they float to the top (about 2–3 minutes). Remove with a slotted spoon and drain.

Step 5: Heat butter or olive oil in a frying pan over medium heat. Pan-fry the gnocchi for 2–3 minutes until lightly golden on all sides.

Step 6: Serve immediately with your favourite low carb sauce, pesto, or just a sprinkle of Parmesan.
