BUTTER CHICKEN

Serves: 4

Ingredients:

500g boneless skinless chicken breasts diced

½ cup chicken stock

½ cup water

¼ cup butter softened

1 tbsp tomato paste

250mls heavy cream

2 tsp minced garlic

1 tsp fresh minced ginger

1 tsp ground turmeric

¼ tsp cinnamon

2 tsp garam masala

1 tsp smoked paprika

¼ cup fresh chopped coriander

2 tbsp olive oil

Instructions:

  1. In a large pot heat the olive oil on a medium high heat. Sauté ginger, garlic and spices in half the butter.
  2. Add chicken and brown.
  3. Pour in water, chicken stock and tomato paste.
  4. Simmer for 30 minutes covered on a low heat.
  5. Stir in cream and the rest of the butter. Cook for another 10 to 15 minutes uncovered for the sauce to thicken.
  6. Serve over cauli rice with coriander sprinkled over.
