Serves: 4
Ingredients:
500g boneless skinless chicken breasts diced
½ cup chicken stock
½ cup water
¼ cup butter softened
1 tbsp tomato paste
250mls heavy cream
2 tsp minced garlic
1 tsp fresh minced ginger
1 tsp ground turmeric
¼ tsp cinnamon
2 tsp garam masala
1 tsp smoked paprika
¼ cup fresh chopped coriander
2 tbsp olive oil
Instructions:
- In a large pot heat the olive oil on a medium high heat. Sauté ginger, garlic and spices in half the butter.
- Add chicken and brown.
- Pour in water, chicken stock and tomato paste.
- Simmer for 30 minutes covered on a low heat.
- Stir in cream and the rest of the butter. Cook for another 10 to 15 minutes uncovered for the sauce to thicken.
- Serve over cauli rice with coriander sprinkled over.
