PORK MEDALLIONS WITH BLUE CHEESE SAUCE

Serves: 4

Ingredients:

800g pork filet (can use beef too)

1 cup cream

140g blue cheese

Salt

For Flexible Carnivore:

Pepper

½ tsp garlic powder

1 tsp fresh chopped parsley

Instructions:

  1. Season your pork filet with salt and pepper if using. Slice your pork filet into medallions.
  2. Heat a pan over a medium high heat. Sear your pork in ghee or butter in batches and remove from the pan.
  3. Turn your heat down and add your cream, blue cheese and garlic powder if using. Allow to simmer gently until the sauce starts to thicken.
  4. Return the pork medallions to the pan and allow to cook through before serving.
