Beef Stroganoff

Makes 4 servings.

Ingredients:

500g beef strips

1 tbsp butter

½ diced onion

150g sliced mushrooms

1 tsp minced garlic

½ tsp dried thyme

½ tsp salt

¼ tsp pepper

¾ cup beef broth

125g cream cheese

½ tbsp Dijon mustard

115ml sour cream

Instructions:

  1. Heat butter in a large pan on a medium high heat.
  2. Season beef with salt and pepper.
  3. Sear the meat for 3 to 4 minutes until browned, remove and rest.
  4. Add onions, mushrooms, garlic and spices and cook for 5 minutes.
  5. Reduce heat to medium.
  6. Add broth, cream cheese and Dijon mustard. Cook for about 8 minutes until the sauce thickens.
  7. Return beef and cook for another 5 minutes.
  8. Remove from heat and stir in sour cream before serving.
