Ingredients:
- 1 cup Walnuts, roughly chopped
- 1 cup Macadamia nuts, coarsely chopped
- 1 cup Brazil nuts, roughly chopped
- 1/3 cup Hemp seeds
- 1/3 cup Flaked coconut
- 6 tbsp Erythritol (or your preferred keto friendly sweetener)
- 1/2 cup Chia seeds
- 1 large Egg white, lightly beaten
- 1/4 cup Avocado oil (or melted coconut oil)
- 1 tsp Ground cinnamon
- 1/2 tsp Ground ginger
- 1/4 tsp Ground cardamom
- Pinch of sea salt
Instructions:
- Preheat your oven to 150°C. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the chopped walnuts, macadamia nuts, brazil nuts, hemp seeds, and flaked coconut.
- Sprinkle erythritol over the nut mixture and toss until evenly coated.
- In a separate small bowl, whisk together the beaten egg white, avocado oil, ground cinnamon, ground ginger, ground cardamom, and a pinch of sea salt.
- Pour the wet mixture over the nut mixture and stir until everything is well combined and coated.
- Spread the mixture evenly onto the prepared baking sheet.
- Bake for 25-30 minutes, stirring halfway through, until the granola is golden and crispy.
- Remove from the oven and let cool completely on the baking sheet.
- Once cooled, break the granola into clusters and transfer to an airtight container for storage.
