The Most Delicious Roasted Zucchini & Feta Soup

This roasted zucchini and feta soup is simple, comforting, and packed with flavour.

Roasting the vegetables and feta first brings out a rich, slightly sweet flavour that you just do not get from boiling everything together. The feta adds a creamy, salty finish without needing loads of dairy, while the zucchini keeps it light and low carb.

Serve it with crispy pork rashers for a satisfying keto-friendly crunch.

🛒 What You’ll Need

• 1 round feta cheese
• 1 onion, diced
• 2 punnets zucchini, diced
• 2 tsp fresh garlic, minced
• 2 tbsp olive oil
• 1 tsp Italian herbs
• Salt, to taste
• 4 cups vegetable stock
• ¼ cup cream, for serving (optional)
• Extra feta, crumbled, for serving

👩‍🍳 Method

Step 1: Prepare the baking dish

Place the feta in the centre of a large ovenproof baking dish.

Step 2: Add the vegetables

Scatter the diced onion and zucchini around the feta.

Step 3: Season

Add the garlic, drizzle with olive oil, and season with Italian herbs and salt.

Step 4: Mix

Gently toss the vegetables around the feta so everything is coated in the oil and seasoning.

Step 5: Roast

Bake at 180°C for 35 to 40 minutes, or until the zucchini is soft and lightly roasted.

Step 6: Transfer to a pot

Carefully transfer the roasted vegetables and feta to a large pot.

Step 7: Add stock

Pour in the vegetable stock and bring to a gentle simmer for 10 minutes.

Step 8: Blend

Use a stick blender to blend until smooth and creamy. Alternatively, transfer to a blender and blend in batches.

Step 9: Serve

Ladle into bowls and top with a splash of cream and extra crumbled feta.

Step 10: Enjoy

Serve with crispy pork rashers or your favourite low carb soup dipper.
