How to Make the Best Keto Broccoli Soup

What You’ll Need

  • 500g fresh broccoli, chopped into florets
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 tbsp olive oil or butter
  • 1 cup cream
  • Salt and pepper to taste
  • 1 pack diced bacon (around 200g)
  • 1 tsp dried thyme (optional)
  • 1/4 tsp nutmeg (optional)

Method

  1. In a large pot, heat olive oil or butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
  2. Add the minced garlic and cook for another minute, stirring occasionally, until fragrant.
  3. Add the chopped broccoli to the pot and pour in the chicken or vegetable broth. Bring the mixture to a simmer and cook for 15-20 minutes, or until the broccoli is tender.
  4. While the soup is simmering, prepare the bacon croutons. In a separate frying pan, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Remove from the pan and drain on paper towels. Once cooled, the bacon will crisp up even more.
  5. Once the broccoli is tender, use an immersion blender to blend the soup until smooth and creamy. If you don’t have an immersion blender, transfer the soup in batches to a regular blender and blend until smooth.
  6. Stir in the cream, and season with salt, pepper, thyme, and nutmeg. Simmer for another 3-5 minutes to ensure the flavors are well blended.
  7. Ladle the soup into bowls, and top with the crispy bacon croutons. Serve hot and enjoy your delicious keto broccoli soup.
