Missing pasta but don’t want the carb crash that comes with it? Zucchini noodles, also known as zoodles, are the ultimate keto friendly swap. They’re light, fresh, and cook in minutes. Best part is, they don’t spike your blood sugar like regular pasta does.
I like mine pan-fried in butter so they stay firm and don’t turn into a soggy mess. Top them with your favourite bolognese, Alfredo, or pesto sauce and you’ll never look at pasta the same way again.

🥣 Makes: About 4 cups zucchini noodles
🛒 What You’ll Need
- 1 pack zucchini (about 400 g)
- 1 tbsp salted butter (or olive oil if preferred)
- Salt, to taste
- Freshly ground black pepper, to taste
👩🍳 Method
Step 1: Use a spiralizer to cut the zucchini into noodle shapes. If you don’t have one, a julienne peeler or sharp knife works too.
Step 2: Heat the butter in a large pan over medium-high heat.
Step 3: Add the zucchini noodles and sauté for 3 to 5 minutes until just tender. Don’t overcook or they’ll become watery.
Step 4: Season with salt and black pepper. Serve immediately with your favourite keto pasta sauce.
💡 Tips from the Keto Kitchen
- Don’t salt the zucchini before cooking, it draws out too much liquid. Season only at the end.
- Keep the heat fairly high so the moisture cooks off quickly and the noodles stay firm.
- Want a creamier base? Toss through a spoon of cream cheese or Parmesan before serving.
- If you’re feeding a crowd, spiralize the zucchini ahead of time and store in the fridge for up to 2 days.
