While it’s not the kind of meal you’d have every day on a carnivore diet, it’s a fantastic option when you’re in the mood for something extra rich and cheesy. Packed with crispy bacon, tender chicken, and a creamy cheese sauce, this dish satisfies those cravings without the carbs. Whether you’re looking for a comforting dinner or a special occasion meal, this low carb Mac & Cheese hits the spot.

Serves 4
Ingredients:
- 1 pack (250g) streaky bacon, diced
- 4 chicken breasts, diced into bite-sized pieces
- Salt to taste
- 250ml cream
- 100g cream cheese
- 1 cup (120g) grated cheddar cheese
- ½ cup (60g) grated mozzarella cheese
Instructions:
- Cook the bacon: In a large pan, fry the diced streaky bacon over medium heat until crispy. Remove from the pan and set aside.
- Cook the chicken: Using the leftover bacon fat, add the diced chicken breasts. Season with salt and cook until golden and cooked through. Remove the chicken from the pan and set aside.
- Make the cheese sauce: In the same pan, add the cream and cream cheese. Simmer over low heat, stirring constantly until the mixture is smooth and begins to thicken.
- Add cheddar: Gradually stir in the grated cheddar cheese, mixing well until the cheese is fully melted and the sauce is creamy.
- Combine: Add the cooked bacon and chicken back into the pan, stirring everything together until well coated with the sauce.
- Bake: Transfer the mixture into an ovenproof dish and top with the grated mozzarella. Bake at 180°C for 15 minutes, or until the top is golden and bubbly.
Tips for Keto:
For extra flavour, add keto-friendly spices such as garlic powder or a teaspoon of mustard to the cheese sauce.
