
The best part of this recipe is you don’t even have to buy extra ingredients. Freeze your veg off cuts and left over bones, chicken carcass etc and when you have enough make a batch. It’s nutrient dense and packed with collagen.
Ingredients:
1.5kg bones (leftover bones, chicken carcass, marrow bones etc)
2 tbsp white vinegar / apple cider vinegar
1 large onion peeled and quartered
1 large carrot peeled and chopped
**You can use any veg off cut you like as well**
3 liters water
Method:
- If your bones are raw and not leftover from cooking you will roast them at 200C for 30 minutes before starting with your broth.
- Cover your bones with water and vinegar in a large pot and let sit covered for 30 minutes.
- Bring the pot to a boil over a high heat.
- Once boiling turn the heat down to the lowest setting possible. Cover and let simmer for 6 hours opening occasionally and skimming off any foam that collects on the surface.
- Add your veg and cook for a further 6 hours.
- Strain your broth and cool before transferring to airtight containers to refrigerate or freeze.
