Salted Caramel Brownie Cup Cakes

What You Will Need:

1 Keto Co. Brownie Pre-Mix

3 eggs at room temperature

½ tsp vanilla essence

180g butter

60g sugar free dark chocolate

175g cream cheese

4 tbsp butter at room temperature

½ tsp caramel essence

½ tsp vanilla extract

½ cup powdered erythritol

½ tsp salt

Instructions:

  1. Preheat your oven to 170C.
  2. Follow brownie mix instructions to step 4 but instead of a baking pan prepare a muffin tin with muffin liners.
  3. Pour your brownie mix into the muffin liners equally (I got 12 out of this mix).
  4. Bake for 15 minutes and allow to cool completely.
  5. While the muffins are cooling beat cream cheese and butter together until smooth in a large bowl. Beat in the caramel essence, vanilla extract, erythritol and salt.
  6. Either pipe or spread onto cooled cupcakes and enjoy.
