  • 1 tsp bicarbonate of soda
  • 1 tsp vanilla extract
  • Pinch of salt

Sauce Ingredients:

  • 1/2 cup cream
  • 3 tbsp butter
  • 2 tbsp Allulose
  • 1 tsp vanilla extract

👩‍🍳 Method

Step 1: Preheat oven to 180°C. Grease a medium baking dish or 8 ramekins.

Step 2: Gently melt chocolate and butter together in a saucepan or microwave. Stir until smooth and glossy. Set aside.

Step 3: In a large bowl, beat eggs and allulose until light and fluffy. Add the cream, vinegar, vanilla extract, and melted chocolate mixture. Mix well.

Step 4: Sift in almond flour, coconut flour, bicarb, and salt. Fold gently, don’t overmix!

Step 5: Pour batter into the prepared dish or ramekins. Bake for 20–22 minutes until just set but still soft in the center.

Step 6: While the pudding bakes, make the sauce. Heat all the sauce ingredients in a small saucepan until gently bubbling and slightly thickened.

Step 7: Pour the hot sauce over the baked pudding as it comes out of the oven. Let it soak for 10 minutes before serving.
