🛒 What You’ll Need
Chocolate Layer:
- 80g Ovo Protein Milk Chocolate, chopped
- 20g coconut oil
Peanut Butter Layer:
- 65g natural peanut butter
- 25g coconut oil
- 15g Allulose (adjust to taste)
- Small pinch of salt (optional, if peanut butter is unsalted)
- ¼ tsp vanilla extract
👩🍳 Method
Step 1: Line 8 silicone moulds or mini muffin cups.
Step 2: In a microwave safe jug, add the peanut butter, coconut oil, allulose, salt, and vanilla extract. Microwave in 20 second bursts until melted and mix until smooth.
Step 3: Spoon or pour the peanut butter mixture into each mould evenly and smooth it out to form the bottom layer. Pop into the freezer for 10–15 minutes to set slightly.
Step 4: While that sets, gently melt the Ovo Protein Milk Chocolate and coconut oil together using the same method in the microwave. Mix until smooth and glossy.
Step 5: Remove the moulds from the freezer and spoon or pour the melted chocolate mixture on top of the peanut butter layer to cover completely.
Step 6: Return to the fridge or freezer to set for at least 20–30 minutes.
Step 7: Once firm, pop them out of the moulds and store in an airtight container in the fridge or freezer.
💡 Tips from the Keto Kitchen
- Silicone moulds work best for easy removal. You can use silicon ice cube trays too.
- Want a crunch? Add some crushed macadamia nut in the centre of the peanut butter layer.
- These will melt if left out too long, always store chilled.
- Make a double batch, you’ll thank yourself later.
