🛒 What You’ll Need
- 200g broccoli florets
- 1 tsp olive oil + spray for baking dish
- 4 spring onions, diced
- 3 tbsp fresh dill, chopped
- 75g almond flour
- 1 tsp baking powder
- ½ tsp salt
- 2 large eggs, lightly beaten
- 60ml olive oil
- 120ml unsweetened almond milk
- 115g feta cheese, crumbled
- 125g mozzarella cheese, shredded
- 3 tbsp grated parmesan cheese
👩🍳 Method
Step 1: Preheat oven to 190°C. Lightly spray or grease a medium baking dish (approx. 27 × 19 cm).
Step 2: Bring a pot of water to a boil. Add broccoli with a pinch of salt, blanch for 1 minute, then drain and pat dry. Roughly chop.
Step 3: In the same pot, heat 1 tsp olive oil over medium heat. Sauté spring onions for 1 minute, then remove and set aside.
Step 4: In a large bowl, whisk almond flour, baking powder, and salt. Add eggs, olive oil, and almond milk, mixing until a thick batter forms.
Step 5: Fold in broccoli, spring onions, dill, feta, and mozzarella. Spread mixture evenly into the prepared dish.
Step 6: Sprinkle parmesan on top and lightly spray with olive oil. Bake 45–50 minutes, until golden brown and set in the center.
Step 7: Cool in the pan for 10 minutes, then slice into squares.
