For Homemade Chimichurri Sauce:
- ½ cup fresh parsley, chopped
- 3 tbsp fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 tbsp red wine vinegar
- ½ tsp chili flakes
- 6 tbsp olive oil
- Salt & pepper, to taste

Step 1: Prepare the chimichurri sauce by combining parsley, cilantro, garlic, red wine vinegar, chili flakes, olive oil, salt, and pepper in a small bowl.
Step 2: Grill or pan-sear chicken breasts until cooked through, about 6–7 minutes per side depending on thickness. Let rest for a few minutes, then slice thinly.
Step 3: Arrange mixed greens, cherry tomatoes, cucumber, and red onion on a plate.
Step 4: Top the salad with sliced chicken and drizzle with chimichurri sauce. Add extra olive oil if desired.
