  • 2 chicken breasts (approx. 300g), grilled or pan-seared

  • ¼ red onion, thinly sliced
  • 2–3 tbsp chimichurri sauce (homemade or store-bought, sugar free and no seed oils)

  • 2 cloves garlic, minced

  • 6 tbsp olive oil
  • Salt & pepper, to taste

Step 3: Arrange mixed greens, cherry tomatoes, cucumber, and red onion on a plate.

Step 4: Top the salad with sliced chicken and drizzle with chimichurri sauce. Add extra olive oil if desired.
