🛒 What You’ll Need
- 1 large bell pepper (any colour), halved and seeds removed
- 150g cooked chicken breast, shredded or chopped
- 2 tbsp keto mayonnaise
- 1 tsp Dijon mustard (optional)
- 1 celery stalk, finely chopped
- 1 small dill gherkin, finely chopped
- 1 tsp fresh parsley or chives, chopped
- Salt & pepper, to taste
- Optional: a few slices of avocado for extra creaminess

Step 1: Cut the bell pepper in half and scoop out the seeds and membranes. Set aside.
Step 2: In a bowl, combine the shredded chicken, mayo, mustard, celery, dill gherkin, parsley, salt, and pepper. Mix until creamy and well combined.
