🛒 What You’ll Need

  • 1 large bell pepper (any colour), halved and seeds removed
  • 150g cooked chicken breast, shredded or chopped
  • 2 tbsp keto mayonnaise
  • 1 tsp Dijon mustard (optional)
  • 1 celery stalk, finely chopped
  • 1 small dill gherkin, finely chopped
  • 1 tsp fresh parsley or chives, chopped
  • Salt & pepper, to taste
  • Optional: a few slices of avocado for extra creaminess

Step 1: Cut the bell pepper in half and scoop out the seeds and membranes. Set aside.

Step 2: In a bowl, combine the shredded chicken, mayo, mustard, celery, dill gherkin, parsley, salt, and pepper. Mix until creamy and well combined.

Step 3: Spoon the chicken mayo mixture evenly into the bell pepper halves.

Step 4: Add avocado slices on top if using, then gently press the two bell pepper halves together to form a sandwich.
